Our seitan is a powerhouse of protein! A single Crispy Cutlet (in either Original Recipe or Spicy Recipe) contains a whopping 25g of plant-based protein―that's 50% of the RDA and holy hell, that's significant.
Seitan is made from Vital Wheat Gluten (VWG), which is naturally low in fat, low in carbohydrates, and high in protein. It contains no sugar, no saturated fats, and no cholesterol. VWG contains significant amounts of iron, calcium, and potassium, plus several B vitamins. It also contains more than the RDA of eight of the nine essential amino acids, which are the basic building blocks for our organs and tissues. The only amino acid that presents in a lower amount is lysine, which is easily found in other foods (like the tomatoes you might stack on top of one our Deluxe sandwiches).
After breading and frying, one of our seitan cutlets has an estimated 3g of fat, 32g of carbohydrates, and 25g of protein. Our seitan nuggets stack up similarly, with an estimated 3.5g of fat, 34g of carbohydrates, and 27g of protein per serving of 4 nuggets.

We will ship to devils anywhere in the 48 contiguous United States (sorry, Alaska and Hawaii). Shipping is free because we love you. We use sustainable shipping boxes with compostable insulation, and they fit four (4) seitan products perfectly.
Please allow 7 business days for us to prepare your order after the order is placed. Customers receive an order confirmation email, followed by a shipping confirmation email with tracking number once the package has been dispatched.
All orders are shipped out on the following Monday after receiving your order. During Monday holidays, when the postal service is not operating, orders will be shipped out one week later, on the following Monday. If you order on a Monday, your items will be shipped out the following Monday.
Packaging and Perishability
This is real food! We ship our seitan frozen in insulated packaging. We provide you an order confirmation email, and then a shipping confirmation email once the seitan is on its way. Please note the tracking number provided, and be ready to bring your devilicious eats into your home and into the freezer as soon as you are able. Items should be kept frozen until ready to reheat and consume.
Our products are kept cool with dry ice. Dry ice should not be handled with bare hands.
Bartleby's is not responsible for spoiled items that were left unattended for an extended period of time or for packages that have been lost or stolen. We will replace your items, free of charge, if shipping is delayed by the shipping company. Please just email us at seitanrising@bartlebysfood.com.
Product Quality and Available Inventory
Quantities of seitan products are limited! We're currently a one-woman shop with restricted access to commercial kitchen space, and limited storage capacity. We are also committed to making the best, most wickedly delicious version of our signature seitan. That means all our seitan is created from scratch, and each cutlet is hand-breaded and individually fried before being packaged and shipped to you. It's wicked special, all right?

Reheating Instructions
Our southern-fried seitan is the best! Keep your items frozen until ready to reheat and stuff yer face. We recommend using an oven (conventional, convection, and air fryer cook times are listed below) for peak crispiness and primo sizzle action. We do not recommend reheating seitan with a microwave.
Cook Times
Pre-heat your oven ot 400°F. Place your frozen seitan on a sheet pan, flipping once about halfway through. You're looking for the seitan to be heated all the way through with an internal temp of 165°F, and the outsides to be crispy and crunchy.
